The nose and the mouth of this oaked Haut-Montravel are an
intense pallet of caramelised pear, peach, banana, raisins, and
rich of honey.
Just beautiful, and not heavy at all.
Here is a wine for sweet toothed people that will enjoy more
sweet flavours in a light way given by the oak. Wonderful isn’t
it?
Curry, foie gras, spiced trout or blue cheese to go with this
brilliant wine.

The sauvignon grapes are picked just before their complete
maturation, according to the right residual sugar level. When
the harvest is clean, we do 10 hours maceration before pressing
the juice. We cool it down in the vat at 5°C to make the deposit
fall down: The settling of the juice.
After that, we control the temperature to extract a maximum of
aromas.
The lees, or the deposit, containing all the goodness and the
natural flavours of the grapes, are added back to the juice.
The wine will get its structure, its aromas, and its freshness
by an attentive precise control by the viticulturers.
Aged a few months in barrel, it gets a vanilla smoked flavour,
round and fine in mouth.
These structured warm and velvety aromas allow this wine to
compliment fish in a sauce or white meat with various vegetables.
Also great with bangers and mash.
