The Sauvignon grapes are harvested a little before their
complete maturation, as soon as the sugar level is enough.
That will make a crip and aromatic wine
We care a lot about the sanitary state of the harvest. Indeed,
the grapes contain the aroma precursor, that are present with
wholesome harvest.
After cleaning the harvest, we do a prefermentation of 10
hours. The juice is kept in contact with the grapes in neutral
atmosphere, generaly CO2.
Then, the harvest is pressed, put in vat, cooled down at 5°c
to get the sediments fall down. That’s what we call the
settling of the juice « débourbage ».
To follow this « débourbage », we put the wines under
temperarure control, to extract a maximum of aromas. The
deposit from the must are filtred and added back to the
product, to get the structure and the aromatic potential that
makes the reputation of our vineyards.
TESTING
COMMENTS
- Pale
yellow coulor, with green reflects. A very bright wine.
- Intense and complex nose. First, floral with a hint of
minerality. Shaking it, it gets more on the fruit side, as
peach and pear, in a smooth and complex way.
- In mouth, round with crunshy grapes, fresh pineapple and
peach aromas. The finish is lemony, bringing freshness and
crispness, wich will match seafood, Tapas and aperitifs.

The grapes are harvested the last one of the estate to let the
surmaturation, the botritys, grows to make the HAUT MONTRAVEL.
After a soft press out, the juice is clarified (seperation of
the main sediments), and put under controles temperature.
The fermentation is stopped before complete transformation of
the sugar in alcohol to maintain a light sweetnessest. We
interupt the fermentation by taking down the temperature of
the wine and by strong filtration. The bottling is done after
2 or 3 racking.
TESTING
COMMENTS
- Shiny
goldy yellow colour.
- Fine nose, discret peach flowers and almonds notes.
- Good balance in mouth between ripe fruits and white
flowers aromas. The soft sweetness and little acidity at
the end make this wine nice and subtle.
- To drink chilled, as an aperitif, with light seasonal
fruit mousse, curry or foie gras.
- This wine will get his culminated point in a year time.
