The Cuvée ULYSSE VALLETTE is the result of a detailed selection of our best grapes, significant of a rich historical soil. The next step for the « winers » concist on a 15 days vatting, in oppositon with thre traditional wine with only 8 days.

After malolactic fermentation, the wine is put in oak barrels for a stay between 9 and 12 months. The proportion of new barrel is 1/3, changed every year. The bottling is done when the tannins are supple enought. We appreciate the evolution of the phenolic composants by regular tastings, wich determinate precisely the bottling.

 
       
  

TESTING COMMENTS

- Robe intense and dense black cherry.

- Nose very complex, vanilla, nutmeg, mint notes. Second nose, get spices and cooked plums.

- In mouth, the wine is supple, very round with vanilla and prune notes. The end is robust, with well present tanins. Good aromatic percistence.

- This Cuvée blend in an elegance way the fruit aromas from the grape and the vanilla notes from the barrel. I twill please you with dishes cooked in sauce, and cheeses.

The harvest is mecanical and well matured.

At reception in the winery, the harvest is de-stemmed and cleaned, then put in vat during 8 days. That is when the fermentation happens.

At the end of the week, we run off (separation of the juice of the harvest). It is the blend between the free run juice and the pressed juice that brings all its originality.

After the malolactic fermentation, the wine are racked in average every 3 months. The racking brings oxygen to the wine and clarify it. During all the vinification and the maturing stages, our wines are followed by an oenologist, that does analyses and give us advises.
 
         
 

TESTING COMMENTS


- Intense red colour with purple reflection.

- A well complex nose, with fresh ripe fruits aromas (raspberry, currant and blackcurrant). Shaking it, it brings up spices and pepper.

- In mouth, it is smooth, elegant with supple tannins, nice velvety red berries aromas.

- A fine and subtle wine that will match summery barbeucues.

- To be drunk between 2 and 5 years to enjoy its fruity side at the most.

Appellation BERGERAC Rosé Contrôlée

The Bergerac Rosé is made by « bleeding » our best vats of Cabernet Sauvignon and Merlot, after 24 hours. It is like red wine making. The bleeding concist on getting out some juice of the tank.

This year, 2005, the juice was so concentrated already from the lovely sun we had during the summer that we kept whole vat only for rosé. It is an exceptional year… !

This juice ferments then seperatly. It is kept at low temperature to leave as much time as it is needed for the juice to express its primary aromatic aromas. It is now a white style vinification.

   
 

 

TESTING COMMENTS

- This wine has a lovely bright raspberry rob, with a perfect limpidity

- The nose is very fruity, and brings out strawberry, raspberry aromas.

- The mouth is fresh and sweetish. You find the nose aromas with notes of flower

- UnA very nice wine, easy to drink and refreshing, long in mouth, with a good balance between fuit and acidity, that will go along perfectly with barbecues and tapas

- To be drunk within the year.
