St Alvère in the Périgord :
the first truffle market
in France to have gone
on-line !

Ingredients

• ½ litre milk or cream
• 4 eggs
• 125g flour
• 100g grated cheese (optional)
• 1 onion
• Ham or bacon
• 1 large tomato
• Salt, pepper, nutmeg

No-pastry Quiche

Method

Pre-heat the oven to 170°c (gas mark 7).
Beat the milk and eggs, add the flour and whisk to avoid creating lumps.
Add salt, pepper and nutmeg to taste. Slice the onion finely and gently fry in a little olive oil. Chop the ham into small pieces.
Gently stir the onions into the egg mixture and pour into a buttered quiche dish. Dot the mixture with ham (which should sink in) and cover with slices of tomato. Cook for 40 minutes.
And there you go! The quiche is ready to eat, hot or cold.
